Ingredients

  • 1.5 cups self-rising flour Or can sub 1.5 cup all-purpose flour + 1 tbsp baking powder + extra for your working surface
  • 3/4 c heavy whipping cream divided
  • ½ cup carbonated beverage like a soda
  • ~3 tbsp Turbinado sugar optional but encouraged

Instructions

  • Preheat the oven to 400 degrees and line a baking sheet with a non-stick spill mat, non-stick spray or parchment paper.
  • In a large bowl or stand mixer combine flour with ½ cup of the heavy whipping cream and your carbonated beverage. Mix until just combined. Scone dough will be sticky, but this is good!
  • Add a few tbsp of flour to a work surface (I use a large cutting board) and drop your scone dough onto it.
  • Gently roll your scone dough around on the floured surface. You’ll notice it will start to form into a ball as the flour “seals” the outside surface.
  • Take your ball of dough and flatten it until it reaches ~6” in diameter.
  • Cut your dough into 6 even triangles.
  • Place scones onto your prepared baking sheet ~2” apart.
  • Using a pastry brush brush your scones with remaining ¼ cup of heavy whipping cream, giving them a generous coating on the stop and sides.
  • Now, sprinkle the turbinado sugar onto the tops of your scones- be generous again!
  • Bake your scones for 14 minutes, allow to cool completely and enjoy!

Notes

You can use any type of carbonated beverages you like. I recommend using regular not diet as this will make your scones sweeter, however diet will work.
