Copycat Wendy's Apple Pecan Salad

This sweet, savory, and refreshing copycat Wendy's apple pecan salad is loaded with protein and a great lunch or dinner recipe whenever you are craving quick and easy. Pecan salad is nutty and made with cranberries, crisp apples, tender chicken, and a tangy pomegranate dressing.

Ingredients

For The Salad

  • 2 cups Romaine Lettuce
  • 2 cups Spring Mix
  • 1 cup Chopped Apple I like pink lady, honeycrisp or fuji!
  • cup Dried Cranberries
  • cup Roasted Pecans you can use honey roasted for an extra pop of sweetness!
  • ¼ cup Blue cheese crumbles
  • ~8 ounces Grilled chicken

For The Pomegranate Vinaigrette Dressing

  • ¼ cup Pomegranate juice
  • 2 Olive Oil
  • 1 tablespoon White Wine Vinegar
  • 1 tablespoon Balsamic Vinegar
  • 1 tablespoon Maple Syrup
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Onion Powder
  • ¼ teaspoon Salt

Instructions

  • Combine the romaine and spring mix together.
  • Top with apples, cranberries, pecans, blue cheese crumbles and grilled chicken
  • In a small bowl combine all ingredients for the dressing
  • Top prepared salad with as much dressing as you like (This is enough to dress ~4 salad, so leftover dressing is okay!) and enjoy!

  • Store the leftovers in an airtight container in the refrigerator for up to four days.
  • For a vegan or vegetarian version, omit the chicken and use non-dairy blue cheese crumbles or omit them.
  • Serve with whatever type of greens or spring mix you desire. You can use a variety of lettuces for this recipe.
