2 Minute Chocolate Zucchini Cauliflower Oatmeal

This oatmeal is loaded with veggies but tastes like a cookie! The high fiber content will be sure to leave you satisfied all morning!

Ingredients

  • 1 small zucchini or 1/2 of a large
  • 1/3 cup quick oats dry
  • 1/3 cup riced cauliflower frozen, uncooked
  • 1/2 cup water
  • 1/2 tsp vanilla
  • 1 tbsp maple syrup
  • 1 tbsp cocoa powder

Instructions

  • Shred zucchini either with a hand held grater or in a food processor
  • In a medium sized bowl combine all ingredients and mix thoroughly
  • Microwave for a total of 2 minutes, stopping to stir ever ~30 seconds
  • Top with your favorite topping and enjoy!

Notes

I'd recommend adding a source of protein to make this a well rounded breakfast. If you add a scoop of protein powder you may need to increase the water by a couple of tablespoons, as that will thicken it.
Other options to add: greek yogurt, nut butter, or flax or chia seeds.
