Cinnamon Peach Baked Oatmeal

This cinnamon peach baked oatmeal is the perfect combination of summer and fall flavors. It's a tasty and nutritious way to start your day!

Ingredients

  • 2 cup old fashioned oats
  • 1/4 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1.5 tsp cinnamon
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1 egg scrambled lightly
  • 1/2 cup unsweetened applesauce
  • 2 tsp vanilla
  • 1.5 cups diced peaches fresh or frozen

Instructions

  • Preheat oven to 350 degrees. Lightly spray an 8x8" baking pan with non-stick spray, set aside.
  • In a large bowl combine oats, flour, sugar, baking powder, cinnamon and salt.
  • Next, add in egg, applesauce and vanilla until just combined.
  • Fold in peaches.
  • Spread oat mixture evenly into baking pan, lightly packing it down, and bake for 30 minutes.
  • Remove from oven and cut into 6 pieces.

Notes

Serve warm or cold.
Topping suggestions: Greek yogurt, sprinkle of cinnamon, additional peaches, maple syrup, honey.
