1,15.5ozcan of chickpeasrinsed, drained, skins removed as much as possible
½cupfinely ground oat flour
¼cuppeanut butter
¼cupmaple syrup
1tbspvanilla
Pinchof salt
¼cupmini chocolate chips
Instructions
Combine all ingredients into a food processor (I used a mini 3-cup one) except the mini chocolate chips.
Process until it’s very smooth (~2-3 minutes)
Fold in the mini chocolate chips & enjoy!

Notes
If you’re using natural peanut butter and pure maple syrup your chickpea cookie dough may be thinner due to the extra moisture. If you’d like it thicker just add a little more flour!
You can sub other flours like all purpose flour, whole wheat flour or 1:1 gluten free flour. I like the taste of oat flour- it tends to have a little more sweetness to it!
Feel free to add any other mix-ins you like such as sprinkles, shredded coconut, etc!
