Chickpea Cookie Dough

Delicious cookie dough that packs a fiber and protein punch! This chickpea cookie dough is a great snack or dessert that is ready in just 5 minutes!

Ingredients

  • 1,15.5 oz can of chickpeas rinsed, drained, skins removed as much as possible
  • ½ cup finely ground oat flour
  • ¼ cup peanut butter
  • ¼ cup maple syrup
  • 1 tbsp vanilla
  • Pinch of salt
  • ¼ cup mini chocolate chips

Instructions

  • Combine all ingredients into a food processor (I used a mini 3-cup one) except the mini chocolate chips.
  • Process until it’s very smooth (~2-3 minutes)
  • Fold in the mini chocolate chips & enjoy!

Notes

  • If you’re using natural peanut butter and pure maple syrup your chickpea cookie dough may be thinner due to the extra moisture. If you’d like it thicker just add a little more flour!
  • You can sub other flours like all purpose flour, whole wheat flour or 1:1 gluten free flour. I like the taste of oat flour- it tends to have a little more sweetness to it!
  • Feel free to add any other mix-ins you like such as sprinkles, shredded coconut, etc!
