In a large bowl or stand mixer add 1 cup + 2 tbsp of the flour and the baking powder and whisk it together.
Now, add in the Greek yogurt and work the dough until it's uniform. I usually start by using a spatula then get in there with my hands to make sure it gets all mixed.
Next, take the remaining 2 tbsp of flour and use it to cover a cutting board to create a work surface. Take your dough (which will be kind of sticky) and divide it into 4 sections. Set aside then do the same thing as mentioned above, lightly beat an egg and using a pastry brush paint the beaten egg onto the bagel.
This time you're going to place your egg washed bagel face down into the bowl of cinnamon sugar giving it a little bit of a press so it sticks. Then, turn it right-side-up and place onto the prepared baking sheet.
