1 Minute Vegan Mug Brownie

An ooey, gooey, singe serving brownie ready in just 1 minute flat! This vegan mug brownie is perfect for anyone- even if you aren't vegan!

Ingredients

  • 2 tbsp flour
  • 1.5 tbsp sugar
  • 1 tbsp cocoa powder
  • 1/4 tsp baking powder
  • 1 tbsp oil canola or melted coconut
  • 3 tbsp non-dairy milk or water either will work!
  • 1/2 tsp vanilla
  • chocolate chips optional but encouraged!

Instructions

  • Spray a mug of ramekin with non-stick spray (optional but can help!)
  • In your mug/ramekin mix together flour, sugar, cocoa powder and baking powder.
  • Add in oil, milk/water and vanilla.
  • Top with chocolate chips.
  • Microwave on high for 60 seconds.
  • Dive on in to your vegan mug brownie and enjoy!

Notes

May use all-purpose, whole wheat, or gluten free flour. This recipe has not been tested with alternative flours like almond or coconut! You may need to play around with this and add a touch more.
May use cow's milk if you like, which will make this a non-vegan mug brownie, but it will still work and taste delish!
Add any toppings or mix-ins you like!
I'd recommend using a >4oz mug. 6-8oz work well.
