Inside Out Egg Roll
This easy Inside Out Egg Roll is made in just 20 minutes, and is incredibly flavorful! You'll love this quick and easy weeknight meal that uses premade coleslaw mix as a shortcut!

Ingredients

cup
rice
dry (can use white or brown)

tbsp
sesame oil
1
cup
diced onion
~1 medium onion
1
tbsp
minced garlic
1.5
tsp
freshly grated ginger
1
lbs
ground beef
1
bag coleslaw mix
14oz
1/3
cup
soy sauce
Green onion for garnish
Sesame Seeds for garnish
Instructions
Cook rice according to package directions
Heat sesame oil in a large skillet or wok over medium-high heat
Add onion, garlic and ginger
Mix together then sauté ~3 minutes until onions are translucent
Add ground beef to the pan
Mix it up with the onions and brown for 5-7 minutes
Add coleslaw mix to the pan and top with soy sauce
Mix it all together
Cover with a lid and cook over medium heat for 5 minutes
Remove lid and let simmer for an additional 5 minutes
Take your cooked rice and fold it into the beef-cabbage mixture
Serve your inside out egg roll with a little green onion and sesame seeds on top and enjoy!
