Potluck Corn Salad

This light version of the classic Frito corn salad is the perfect dish for you next party or potluck!

Ingredients

  • 3 cans 15 oz whole kernel corn, drained
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 1/2 cup red onion diced
  • 3/4 cup light mayo
  • 2 cups low fat shredded cheddar cheese
  • 4 oz Fritos crushed (~3-4 cups)

Instructions

  • Combine first 4 ingredients in a large bowl, mixing until combined
  • Add mayo and coat evenly
  • Fold in cheese
  • Right before serving fold in 3/4 of the Fritos, reserving remaining 1/4 to sprinkle on top
  • Serve chilled

Notes

It's best to let the salad sit for a few hours or overnight before serving to allow the flavors to combine.
