Baked Cinnamon Roll Donuts

The perfect mix of an ooey gooey cinnamon roll combined and a fluffy donut that's ready in just 20 minutes!

Ingredients

For The Donuts

  • 1 cup all purpose flour
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 egg
  • cup sugar
  • cup milk I used whole milk
  • 1 tsp vanilla extract

For The Cinnamon Swirl

  • 2 tbsp butter melted
  • 2 tbsp brown sugar
  • ½ tsp cinnamon

For The Frosting

  • 1 tbsp butter melted
  • 1/3 c powdered sugar
  • 1.5 tsp milk

Instructions

  • Preheat oven to 350 degrees and spray a donut pan with non-stick spray, set aside. 
  • In a medium sized bowl combine flour, baking powder, ½ tsp cinnamon, and salt. Set aside.
  • In a large bowl combine egg, sugar, milk, and vanilla. Whisk together well.
  • Add flour mixture and stir until just combined.
  • Pour your batter into your prepared donut pan and set aside.
  • In a small bowl combine all ingredients for the cinnamon topping. This should be runny! (If it's not that means your butter cooled too much- just pop it in the microwave for a few seconds) Then, drizzle it evenly over the top of the donuts (it won’t cover them all- that’s okay!)
  • Now, take a knife and being to “swirl” in your cinnamon sugar mixture to the donut batter. Be sure that none of the cinnamon mixture “pools” at the edges (this will cause it to spill out) fold it into the batter. 
  • Bake for 10 minutes or until golden brown and a toothpick when inserted comes out clean. Allow donuts to cool fully before adding frosting. 
  • In a small bowl melt your butter (it can be still warm for this!) Then add in the powdered sugar and milk, stirring until you have a uniform frosting. (if your frosting is clear you’ll need to add more powdered sugar- you want to see it!! If it's tooo thick and won't drizzle add just a few drops of milk at a time.. really.. drops!)
  • Drizzle your frosting over the donuts immediately (if you wait too long your butter will cool and harden)
  • Enjoy!

Notes

If you don't have donut pan you can cook these in a muffin tin. You'll likely need to extend the cooking time by ~5 or so minutes. Check them every few minutes after 10 minutes. They're finished once a toothpick comes out clean when inserted into the middle!
May sub whole wheat or 1:1 gluten free flour.
To easily fill the donut pan you can put your batter into a ziplock sandwich bag, (right into one of the corners!) snip the corner with scissors then essentially "pipe" it into the donut pan. Nice & clean donuts!
Store the donuts in a container on the counter for ~5 days. If it will be longer you can freeze them for 2-3 months. I recommend freezing them on a plate first then placing into a bag- this prevents them from sticking together!
