Cakesicles

If you're in the mood for cakesicles, then you are going to love this chocolate-coated cake crumble recipe! Made with popsicle molds and colorful sprinkles, these frozen cake pops are fitting treats for any occasion!

Ingredients

  • 2 cups cake crumbles*
  • cup frosting
  • 1 tablespoon sprinkles
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoon coconut oil

Instructions

  • In a large bowl mix together the cake crumbles, frosting and sprinkles. Set aside.
  • Combine the chocolate chips and coconut oil into a bowl and microwave for 1-2 minutes until melted. Stop the microwave to stir every 20-30 seconds to prevent burning.
  • Using a paintbrush** paint your melted chocolate into the popsicle mold. Be sure to cover the entire thing so there are no see through areas and the sides are completely covered all the way up (Note: You want this to be as thin as possible without being see through- this is why the paintbrush works so well! Otherwise the chocolate cracks so much when you eat these cakesicles!)
  • Place mold with chocolate in the freezer for ~5 minutes until hardened.
  • Remove mold from freezer after 5 minutes and fill it with the cake mixture. Fill each mold to the top and then Insert popsicle sticks into the mold and flatten any areas. Adjust the cake filling as needed after inserting the popsicle sticks. Be sure to flatten the top of the cake mixture so it’s nice and smooth (not clumpy!)
  • Now paint the over the cake filling with more chocolate, encasing it. I found it helpful to put a puddle of chocolate and then use the paintbrush to spread it out. Be sure that you can’t see the cake filling and it’s covered in nice, smooth chocolate. Again, you want this to be as thin as possible without being see through- this is why the paintbrush works so well! Otherwise the chocolate cracks so much when you eat these cakesicles. This can be a bit tedious- but it’s worth it to take your time to get nice clean edges!!!
  • Now, add additional sprinkles on top of the chocolate coating if desired.
  • Place cakesicles in the freezer for ~30-60 minutes to harden.
  • Remove frozen cakesicles from the freezer and carefully remove them from the mold.
  • If you want to add sprinkles to the other side (the one that was face down) Re-microwave your chocolate for ~30 seconds if necessary and paint on a little more chocolate so the sprinkles have something to stick to, add sprinkles, and then pop back in the freezer to harden for ~5 minutes. This is also when you can fix any cracks or spots if those happened when taking them out of the molds- make sure everything is covered!

Notes

*To make the cake crumbles prepare a boxed cake mix (I used a yellow cake mix) according to package directions. Then crumble the finished cake into a bowl to make cake crumbles.
**You can also use a spoon but I recommend using a small paintbrush to do so. Be sure to use a brand new, washed, chocolate dedicated brush!
I like to eat these frozen, like popsicles, but you could serve them at room temp as well.
