Separate lettuce leaves. Wash & pat dry. Set aside.
Heat a large pan over medium-high heat and saute onions and garlic with water for 3-5 minutes until onions are translucent.
Add ground chicken to the onions. Brown meat, breaking it up with a spatula as you cook, for ~3-5 minutes.
Once chicken is browned, add SunButter, soy sauce, salt and pepper. Cook for an additional ~2 minutes, until Sun Butter has melted and dispersed evenly.
Evenly distribute chicken into lettuce leaves and top with green onion and sunflower seeds.
