Easy Chicken Lettuce Wraps

These copy-cat PF Chang's chicken lettuce wraps are stepped up by using SunButter in place of traditional peanut butter!!

Ingredients

  • 1 head of romaine lettuce
  • ½ onion chopped
  • 2 cloves garlic minced
  • 2 tbsp water
  • 1 lb ground chicken
  • ¼ cup SunButter
  • 2 tbsp soy sauce
  • Dash of salt & pepper
  • ¼ cup green onion diced
  • 2 tbsp sunflower seeds

Instructions

  • Separate lettuce leaves. Wash & pat dry. Set aside.
  • Heat a large pan over medium-high heat and saute onions and garlic with water for 3-5 minutes until onions are translucent.
  • Add ground chicken to the onions. Brown meat, breaking it up with a spatula as you cook, for ~3-5 minutes.
  • Once chicken is browned, add SunButter, soy sauce, salt and pepper. Cook for an additional ~2 minutes, until Sun Butter has melted and dispersed evenly.
  • Evenly distribute chicken into lettuce leaves and top with green onion and sunflower seeds.
  • Serve warm and enjoy!
