Almond Birds Nest Cookies

These gluten & dairy free cookies are as cute as they are delicious! They do double duty as an adorable, edible center piece!

Ingredients

  • ½ cup butter softened
  • ½ cup sugar
  • 2 eggs
  • 1 ½ tsp almond extract
  • ½ tsp vanilla extract
  • 2 ½ cups almond flour packed
  • 1 tsp baking soda
  • 1 package chocolate egg candies

Instructions

  • Preheat oven to 350 degrees. Line a baking sheet with a spill mat or parchment paper, set side. 
  • In a large bowl cream together butter and sugar. 
  • Add in eggs and extracts, mixing well. 
  • Next, add almond flour and baking soda to the wet ingredients, mixing until well combined. 
  • Using a cookie scoop or a spoon, place ball of dough onto cookie sheet 2 inches apart. 
  • Bake for 15 minutes, until golden brown. 
  • Remove cookies from oven and immediately press 3 chocolate egg candies into the center of each cookie. 
  • Allow to cool
