Summertime and the livin’ is easy. Can I get an AMEN?! Mine has been full of t-ball games (Aunt life = best life), long walks in the sunshine with the hubs and pup, and these 2 ingredient cherry cashew bites.
The sweet taste of cherries is my fave. And here in Michigan, where I live, we’ve got some GOOD cherries. Right now the cherries are just about in peak season (You’ve got to check out the Cherry Festival- it’s A.) delicious and B.) Traverse City is GORG!) and I think I eat my weight in cherries a few times over every year. Moderation goes out the window for a second there. Oh well, it happens.
These 2 ingredient cherry cashew bites are made with dried cherries. So, even if it isn’t peak cherry season like it is now you can still enjoy them! Super convenient, right? I use Graceland Fruit when it comes to any and all things dried fruit. They’re a local Michigan company and their products are seriously the most flavorful I’ve tasted. Dried fruit should NOT taste like rubber, and these DEF don’t. You can snag some here, even if you aren’t in Michigan! I may be biased, but we’ve totally got the best fruit here in the mitten state.
Anywhoo! Back to the recipe. Guys? These are STUPID simple! You can honestly swap out the cashews for another nut, if that’s what you have on hand. I personally love the taste of cashews and their buttery smoothness, so that’s what I used.
You can jazz these babies up any way you like. You could:
- dust them with cocoa powder
- roll in coconut
- dip in melted chocolate or nut butter
- forget forming balls and eat by the spoonful
If you wanted to change things up even more you could use a different dried fruit. Graceland Fruit also have dried blueberries, which I am obsessed with! Man, don’t even get me started on Michigan blueberries- Duh-ROOL! Blueberry almond bites would be faaaab!

Make a big batch of these (plain or jazzed) for a quick grab and go snack for those busy summer days. Heck, make it a double and throw some in the freezer. Never get to that fearful state of “Oh sh*t, we’re out of snacks!” again! Come on, we’ve ALL been there!
2 Ingredient Cherry Cashew Bites
Ingredients
- ⅔ cup Graceland Fruit Dried Cherries
- 1 cup cashews I used roasted, unsalted
Instructions
- In a food processor combine both ingredients and pulse for a few seconds on low to combine
- Once beginning to combine continue to process, slowly increasing the speed until you reach the highest setting. It will process here for a few minutes until everything is combined and able to be formed into a ball.
