I’ve said this before but… I meal prep donuts. Seriously! I love to make a batch on a Sunday to enjoy throughout the week with my coffee. And these baked cinnamon roll donuts are the bomb.com!

Anywhooooo. Our bodies need carbs in the AM (I do NOT recommend intermittent fasting!) and these donuts fit the bill. Plus? You could easily use a little gentle nutrition and use some whole wheat flour in these cinnamon roll donuts! BOOM! Ya got yourself some whole grains and fiber for some serious staying power!
Plus.. I haven’t even mentioned the best part… guys? These take less than TWENTY MINUTES TO MAKE! Have I sold you on these yet?! Thought so.

For The Cinnamon Roll Donut Frosting
How To Make This Recipe
Preheat your oven to 350 degrees and spray a donut pan with non-stick spray, set aside.
In a medium sized bowl combine flour, baking powder, cinnamon, and salt. Set aside.
In a large bowl combine egg, sugar, milk, and vanilla. Whisk together well.
Add flour mixture and stir until just combined. Now you have your cinnamon roll donut batter base!
Pour your batter into your prepared donut pan and set aside.
Now it’s time to make your plain batter into cinnamon donut batter. In a small bowl combine all ingredients for the cinnamon topping. This should be runny! Then, pour it evenly over the top of the donuts (it won’t cover them all- that’s okay!)
Then, take a knife and being to “swirl” in your cinnamon sugar mixture to the cinnamon roll donut batter. Be sure that none of the cinnamon mixture “pools” at the edges (this will cause it to spill out) fold it into the batter.
Bake your donut cinnamon rolls for 10 minutes or until golden brown and a toothpick when inserted comes out clean. Allow donuts to cool fully before adding frosting.
In a small bowl melt your butter (it can be still warm for this!) Then add in the powdered sugar and milk, stirring until you have a uniform frosting.
Drizzle your frosting over the donut cinnamon rolls immediately (if you wait too long your butter will cool and harden)

Recipe FAQs
I do recommend getting yourself a donut pan, they’re so fun and you can snag one on Amazon for like 13 bucks! But if you don’t have on totally fine! If you don’t have a donut pan you can use a muffin tin. Follow all of the same instructions but just check them at 10 minutes. You may need an additional minute or two of baking time~
For these donuts it is very important that before you put them in the oven that there isn’t cinnamon swirl pooling on the sides of the donut pan. You want to make sure it’s all swirled into the donut batter! Otherwise, it’ll cause your donuts to spill over the top of the donut pan. It’s not bad- but just doesn’t look as pretty!
These muffins keep on the counter for ~5 days. I’d recommend not adding the frosting or cinnamon sugar until you’re ready to eat them.
For freezing, first freeze them on a plate and then pop ’em in an air tight freezer bag and they’ll keep for ~2-3 months.
Expert Tips
- To easily fill the donut pan you can put your batter into a ziplock sandwich bag, (right into one of the corners!) snip the corner with scissors then essentially “pipe” it into the donut pan. Nice & clean donuts! (I have a photo how-to in my baked banana donut recipe post!)

- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt

- 1.5 tsp milk

Made these as a thank you for my friends who let me stay with them. One is gluten free and dairy free- I used Namaste gluten free flour and soy milk to accommodate for her dietary needs and they turned out fantastic!
