Now, I’m not a vegan by any means and I still love this recipe! There isn’t one thing I would change about it. Plant based or not, this recipe is for you!

What Are Mug Cakes?

Oh, man. If you have never made a mug cake before hold onto your hats because your mind is about to be blown. A mug cake is essentially what it’s called- a cake made in a mug!

You’ll never again have to worry about having a craving but not having a cake. Because, let’s be real, who just usually has a cake laying around? Not me, unless it’s someone’s birthday or something. Mug cakes take just about two minutes to put together. Just two minutes to happiness!

You can make so many different types of mug cakes, like a mug pancake or even a mug brownie!

Ingredients For A Vanilla Vegan Mug Cake

Here is what you’ll need to make your vanilla vegan mug cake with sprinkles:

  • flour
  • sugar
  • oil
  • non-diary milk
  • vanilla
  • baking powder
  • salt
  • sprinkles

I like to use a small ramekin VS a mug, actually. All of my mugs are pretty tall and while there is nothing wrong with that, it’ll totally work, I just think it looks nicer in the more shallow dish. I snagged a set of 6 ceramic ramekins off of amazon for less than $14 bucks and I use them so often! I also use them for dips, like salsa!

How To Make A Mug Cake In The Microwave

The first thing that I like to do is spray the mug or ramekin with non-stick spray. This just helps keep it from sticking, obviously.

Next, I like to first add all of the dry ingredients. So add the flour, sugar, baking powder, and salt.

Then, add in the wet ingredients: oil, milk, and vanilla.

Stir it up real well and then fold in your sprinkles!

Pop your mug cake into the microwave and cook for 30-60 seconds. Your cake is done when a toothpick or cake tester inserted comes out clean. Enjoy!

Serious note on the cake tester: get one. I’ve had the same one for years and it not only reduces waste of continually using toothpicks but let’s be real.. those toothpick boxes always break and they go EVERYWHERE! You can snag one for only a wire cake tester for just a few bucks. So worth it!

Can Mug Cake Be Made In Ovens?

Sure! You could make a bunch of mug cakes in the oven at once, if you like. I once went to a winter birthday party and instead of cake we all got our own chocolate mug cake with a straw so it looked like hot chocolate!

To cook this vegan mug cake in the oven follow all of the same directions but cook for ~10-12 minutes at 350 degrees. Be sure that whatever dishes you’re using (mugs or ramekins) are ovenproof!

Can I Make A Vegan Chocolate Mug Cake?

Sure thing! I’d just swap out 1 tbsp of flour for 1 tbsp of cocoa!

What To Do With Mug Cakes

Firstly, I’d recommend just diving into it with a fork or spoon! Eating it as-is is fabulous!

You could also try these ideas to get a little creative with your cake:

  • Top with your favorite ice cream
  • Remove from the mug, slice in half and make an ice cream sandwich
  • Crumble the mug cake on top of a smoothie
  • Add bits of the cake to a yogurt bowl

Can Mug Cake Be Stored In The Fridge?

Absolutely! Either wrap it in plastic wrap or transfer it to a container and you can keep it in the fridge for 5-7 days! You could also freeze your mug cake, if you feel so inclined. Frozen mug cake will keep for a new months.
