Chicken fajita tacos and fajita taco salads are a weeknight staple! In just 30 minutes you have a complete dinner that will rival Qdoba.. it’s that good!

What I love most about this fajita taco recipe, besides being insanely delicious, is that it’s really a one-stop-shop. You have your protein, veggies, and carbs all right there. Plus, the clean up is minimal. Prefer to have a taco salad no problem, those are just as easy to make!

What Do I Need To Make Chicken Fajita Tacos & Taco Salads?

Here is what you’ll need in order to make this easy and quick dinner:

  • 1 lb chicken (I like chicken breast, but chicken thighs will also work)
  • 1 packet taco seasoning
  • 3 bell peppers (I like to do three different colors to make the dish nice and bright- we eat with our eyes, too!)
  • 1/2 red onion
  • 1/2 sweet onion
  • ~2 cups shredded lettuce
  • ~8 corn or flour tortillas (for tacos)
  • ~1 cup cooked rice (for salads)
  • Salsa (optional)
  • My 2 minute avocado lime crema (optional, but highly encouraged!)

How Do I Make This Fajita Tacos Recipe?

First, you’ll want to slice your chicken into ~1″ strips. Then, toss the chicken strips with the taco seasoning, coating evenly.

From there, slice your peppers into ~1/2″ strips. Here is a good blog post I found on how to cut bell peppers for fajitas.

Now, I have two options for you for cooking. The first is using the oven, the second is using the air fryer. I like to use the air fryer because it’s faster, but you can do whatever works best for you! PS. if you don’t have an air fryer I highly recommend snagging one! You can find the one I recommend here.

Oven Cooking Directions

Preheat your oven to 350 degrees and lightly spray a baking sheet with non-stick spray. Spread your prepared chicken onto half of the baking sheet and your peppers and onion on the other half. Bake for a total of 25-30 minutes, flipping the chicken and mixing up the peppers once halfway through.

Air Fryer Cooking Directions

Spray the basket of your air fryer with non-stick spray. Place your chicken in the basket and cook for 10 minutes at 370. Flip the chicken and add the peppers, cook for an additional 8 minutes at 370.

How To Assemble Tacos

To assemble the tacos all you have to do is take a corn tortilla (you can also use flour, but I prefer corn) then layer lettuce, chicken + peppers mixture, salsa, and avocado lime crema. Voila! Done!

If you want to get really fancy you can char your tortillas before assembling them. Here is a good blog post on how to char tortillas, I think it adds so much satisfaction to the meal, I do it every time!

How To Assemble Fajita Salads

On a plate layer lettuce, cooked rice, chicken + peppers mixture, salsa, and avocado lime crema. You can also sub the rice for a batch of my air fryer tortilla chips, but I highly HIGHLY recommend including a carbohydrate at meals. This will give your body the energy it needs and prevent you from running to the pantry in search on all things carbs an hour after dinner.

Chicken Fajita Tacos & Salads FAQ’s

Can I use a different protein other than chicken?

Absolutely! I’ve made this with ground beef, tofu, and fish. Simple cook the other protein source as you normally would and add the taco seasoning.

Can I make this on the stove top?

Yep! I usually will cook the chicken in a large sauce pan over medium high heat with a drizzle of olive oil for about 5 minutes, then add the peppers!

Can I meal prep these fajita tacos?

Totally! I will usually make a big batch and have leftovers as lunch for the week! Store extras in a container in the fridge for ~5 days. To re-heat, simple microwave.

Chicken Fajita Tacos (& Salads!)

Just as good as Qdoba! These chicken fajita tacos & salads are delicious and ready in just 30 minutes! They also make great meal prep!

Ingredients

  • 1 lb chicken (I like chicken breast, but chicken thighs will also work)
  • 1 packet taco seasoning
  • 3 bell peppers, a mix of colors
  • 1/2 red onion
  • 1/2 sweet onion
  • ~2 cups shredded lettuce (more for salads)
  • ~8 tortillas (for tacos)
  • Rice (for salads)
  • Salsa (optional)

Instructions

Cut your chicken in to 1" strips, place strips into a medium sized bowl, add taco seasoning, toss to coat.

Slice your peppers into ~1/2" strips and slice your onions.

**If making salads please prepare 1 cup uncooked rice (4 servings) per package directions.

Oven Directions: Preheat oven to 350. Lightly spray a cooking sheet with non-stick spray and place chicken on one side and peppers/onion mix on the other side. Place baking sheet in the oven for 20 minutes, flipping chicken and veggies halfway through.

Air Fryer Directions: Spray your air fryer basket with non-stick spray. Place chicken in the basket (if using a smaller air fryer may need to do 2 batches) and cook at 370 for 10 minutes. Flip chicken and add peppers/onion mix. Cook for an additional 8 minutes.

To assemble tacos: Inside of a tortilla place shredded lettuce followed by peppers, chicken, salsa and avocado lime crema.

To assemble salads: On a large plate place lettuce followed by rice. Then add peppers, chicken, salsa and avocado lime crema.

Notes

Feel free to use any type of rice or tortillas.

For extra 'fancy' rice add a little lime juice and cilantro when cooking!

Serve with an extra batch of avocado lime crema and some air fryer tortilla chips!

If doing as meal prep wait to add the salsa and avocado crema until just before eating.
